EVOH (Ethylene Vinyl Alcohol) is a special type of plastic that is really good at keeping oxygen out. However, it's not very good at keeping water vapor from passing through. To solve this, we often sandwich EVOH between two other layers of plastic to keep its oxygen-blocking properties while still allowing for a barrier against moisture.
